Drover’s Sauce

Ingredients

  • 7 oz pancetta
  • 1 Tbsp lard or olive oil
  • 1 Cup grated pecorino
  • Salt
  • Pepper

Directions

Cut the pancetta into small cubes and put them in a pan with the lard or olive oil. Sauté until the meat has melted and taken on a beautiful golden color.

Pour the meat into a bowl, grate in the pecorino and a strong grind of pepper. Combine with freshly cooked and drained pasta and leave to cook a few moments longer in the heat of the pan.

Like carbonara, this needs to be mixed with the pasta at the last minute.
