Ingredients

  • 6 ounces (170 grams) hot-smoked salmon or lox, flaked or torn into pieces
  • 5 ounces (140 grams) mascarpone
  • 4 ounces (115 grams) full-fat ricotta
  • ¼ cup (5 grams) fresh dill fronds
  • 2 tablespoons minced fresh chives
  • Grated zest of 1 lemon, plus some juice

Directions

  1. Combine all the ingredients in the bowl of a food processor and pulse until smooth. (Or finely chop the salmon and mix the ingredients together in a bowl.)
  2. Season to taste with salt, pepper, and a generous squeeze of lemon juice.
