Basic White Sauce

Ingredients

  • 3 1/2 Tbsp butter
  • 1/3 Cup flour
  • 2 Cups milk
  • Nutmeg
  • Salt

Directions

Melt the butter in a saucepan over medium heat. Add the sifted flour and cook slowly for a few minutes, stirring continuously, and without letting it take on any color. Take the saucepan off the heat and add the warm milk to the butter and flour, mixing with a wooden spoon.

Put the saucepan back over very low heat, stir constantly until the sauce begins to boil. Season with salt and a grating of nutmeg. Cover and let the sauce cook and thicken for about 15 minutes, always over very low heat and stirring occasionally.
