Spicy Bread Sauce

Ingredients

  • Parsley
  • Capers
  • Garlic
  • 1 Tbsp chopped cornichon
  • Onion
  • 2 anchovies
  • 2 oz crustless white bread
  • 3 Tbsp olive oil
  • 1 Tbsp vinegar
  • Salt
  • Pepper

Directions

With a pestle and mortar: Bring together a good fist of parsley, some capers, garlic, the cornichon and half a chopped onion. Wash and bone the anchovies and add to the mix. Pound gently to crush. Soak the bread in water and squeeze dry in your hands. Add to the mix and mash everything to a paste. Season with salt and pepper. Put this paste in a bowl and dilute it slowly with the oil, assembling it like a mayonnaise. Finally, complete it with a tablespoon of vinegar.
