Spicy White Sauce

Ingredients

  • 5 1/2 Tbsp butter
  • 5 Tbsp flour
  • 2 egg yolks
  • Lemon
  • 2 tsp mustard
  • Salt
  • Pepper

Directions

Melt half the butter over very low heat in a saucepan. Add the flour and cook slowly for a few minutes, stirring continuously. Bring 2 cups of water to a boil and add a little at a time, until the sauce has returned to a boil. Season with a little salt and a pinch of pepper, reduce the heat, and cook for 10 minutes.

Remove from the heat and add the beaten egg yolks, stirring constantly, and the rest of the butter, cut into small pieces. To serve add a few drops of lemon juice, the mustard, and stir one last time with a wooden spoon and pour into a gravy boat or pitcher.
