Pulled Noodles

Ingredients
- 200g of 00 flour
- 1/2 tsp salt
- 100g flour
Directions
- Add the salt to the water and stir until it is fully dissolved.
- Slowly sprinkle in the salted water to the flour and rub the flour between your thumb and fingers until it is well incorporated
- knead the dough into a log. Use the heel of your palm to press down the log, starting from one end of the log and work your way down to the end. Then grab part of the dough that you squished and curl it back into the log.
- Once you have squished and curled the log, fold the log in half and roll the log again to be a little longer again. When kneading, always keep the dough aligned in one direction. Knead this way for about 10 minutes
- fold the dough up several times (wat the video on ensure it is done the right way).
- Rest for 10 minutes
- Cut slice with the grain. Stack up the sliced noodles closely and cover well in oil and plastic wrap
- rest for at LEAST 3 hours, but for 8 hours or overnight works too.
- One noodle at a time, pull and smack it to pull it out. Don’t get too greedy though as then the noodle ends will break
