Cream Sauce with Eggs
Ingredients
- 3 egg yolks
- Nutmeg
- 2 Tbsp butter
- Pepper
- 2 Tbsp butter
- 1/4 Cup flour
- 2 Cups chicken broth
Directions
Make a Cream Sauce using the ingredient amounts listed above. When it is warm, take off the heat and strain it through a sieve.
Whisk the egg yolks into a warm sauce, stirring constantly. Add a pinch of pepper and a whisper of nutmeg.
Put the pan back on the heat and stir without interruption so it becomes thicker. Remove from the heat, add the butter in small pieces, check the flavor, and serve it straight away or keep it warm in a bain-marie.
