Creamy Tomato Sauce
For baked pasta and pies
Ingredients
- 1 onion
- olive oil
- 1 carrot
- Parsley
- Basil
- 2 1/4 lb tomatoes
- Salt
- Pepper
Cream Sauce
- 3 Tbsp butter
- 1/4 Cup flour
- 3 Cups broth
Directions
Make a Cream Sauce with the ingredient amounts listed above. Chop the onion and sweat in some oil with chopped carrot, parsley, and basil.
Wash and peel the tomatoes and purée them in a food mill or blender. Add this purée to the onions and simmer for 30 minutes. Season with salt and pepper. Then combine with the white sauce and leave to cook together for a few minutes.
