Double Cream Sauce

For stuffed pastas, such as Cappelletti, Classic Ravioli, and Cannelloni.

Ingredients

  • 7 Tbsp cream
  • 2 Tbsp butter
  • Salt

Cream Sauce

  • 2 Tbsp butter
  • 1/4 Cup flour
  • 1 Cup chicken broth

Directions

Make a Cream Sauce using half the butter, the flour, and chicken broth listed above.

For the last 10 minutes of cooking, add half the cream a little at a time, always stirring. When the sauce has thickened well, remove it from the heat and taste it. Add salt if you need it. Pour in the remaining cream and the rest of the butter in small pieces, always stirring.
